Tangerine cake with hazelnuts and chocolate chunks

This is a winter favorite when tangerines are at their best. A tangerine flavored cake enriched with hazelnuts and chocolate chunks. It is low fat and so easy to make! You can watch the relevant video on our YouTube channel

Ingredients

  1. 50 ml olive oil
  2. 50 ml butter melted
  3. 4 large eggs
  4. 250 g sugar granulated
  5. 150 ml tangerine juice (app 5 tangerines)
  6. zest of 5 tangerines
  7. 50 ml cognac or brandy
  8. 250 g all purpose flour sifted
  9. 50 g corn flour sifted
  10. 2 tsp baking powder
  11. 80 g ground hazelnuts toasted or untoasted
  12. 110 g dark chocolate (or chocolate drops)
  13. tangerine slices for serving (optional)

Method

  1. Preheat your oven at 180°C/350°F
  2. In a bowl beat the olive oil and the melted butter with the sugar
  3. Add the eggs one at a time Beat until incorporated
  4. Add the tangerine juice the cognac and the tangerine zest
  5. Gradually add flour corn flour and the baking powder
  6. With a spatula fold the hazelnuts into the batter
  7. With a sharp knife cut the chocolate into chunks (no need if using chocolate drops)
  8. Fold the chocolate into the batter
  9. Pour the batter into a cake mold
  10. Bake for 45min or until a skewer comes out clean
  11. Let it cool completely before serving
  12. You can decorate your cake with powdered sugar and serve it with tangerine slices
