Tasty pea soup with asparagus and potatoes!

Inspired by green pea soup recipe by The little epicurean

Ingredients

  1. 6 asparagus with bottom parts cut off
  2. 2 medium potatoes boiled
  3. 5 cups frozen peas
  4. 2 tablespoons Canola oil
  5. 1 onion chopped
  6. 2 garlic cloves chopped
  7. 3 cups vegetable stock
  8. 1/3 cup cream or sour cream
  9. to taste salt/pepper
  10. 1/2 teaspoon paprika
  11. 1/2 teaspoon all purpose seasoning
  12. 2 pieces leek – white and light green parts only
  13. few drops green food colouring

Method

  1. Cook onions halfway with oil in a pan over medium heat Add garlic to onions and cook both until softened
  2. Add boiled potatoes asparagus leek frozen peas (cook frozen peas in microwave first for 1 1/2 minutes) and vegetable stock to pan
  3. Simmer (low heat) for 10 minutes
  4. Add cream and simmer for a further 4 minutes
  5. Puree soup in a blender and drain soup (if you have a bad blender)
  6. Microwave soup for 1 1/2 minutes and serve
