Tomato Soup

Ingredients

  1. 8 vine tomatoes
  2. 2-3 cups chicken broth
  3. 1/2 stick cream cheese
  4. 2 table spoon Italian seasoning
  5. 2 teaspoon basil
  6. to taste Salt
  7. to taste Pepper
  8. 6 slices bacon (can be subbed for pepperoni)
  9. 1 red onion
  10. 2 tablespoon garlic
  11. as needed Butter
  12. 2 tablespoon parsley
  13. 2 tablespoon oregano
  14. 2 tablespoon thyme
  15. 2 tablespoon Rosemary

Method

  1. Cut 5 tomatoes in half oil them with olive oil and sprinkle with salt and pepper Roast in grill at medium heat for 8 minutes each side (or until blackened in spots)
  2. Cook bacon and sauté onions and garlic and spices
  3. Bring chicken stock to heat and add the pan mix covered
  4. Add remaining tomatoes diced and cream cheese
  5. Add pinches of flour to desired consistency if necessary
  6. Enjoy!
