Vada Pav

Vada pav is a very popular Indian street food snack, consisting of spiced, deep-fried potato garnished with various chutneys.


  1. For the spiced potato mix:
  2. 1 1/2 cups boiled and mashed potatoes
  3. 2 green chillies chopped
  4. 1/4 tsp asafoetida
  5. 1 tsp chat masala
  6. 1 tsp coriander seed powder
  7. 1/2 tsp garam masala powder
  8. Salt as per taste
  9. 4 tbsp fresh coriander leaves chopped
  10. For the batter:
  11. 3/4 cup sifted gram flour
  12. 1/2 water or as required
  13. 1/2 tsp turmeric powder
  14. 1/2 tsp red chili powder (optional)
  15. Salt as per taste
  16. For the green chutney:
  17. 2 tbsp water
  18. 1/2 cup coriander leaves
  19. 1/4 th cup mint leaves (optional)
  20. 3-4 green chilies or as required
  21. 3-4 garlic cloves
  22. 1/2 lime juice
  23. Black salt as per taste
  24. For the dry garlic chutney:
  25. 5-6 garlic cloves chopped coarsely
  26. 1/2 cup desiccated coconut
  27. 1/4 th cup roasted peanut
  28. 1 tbsp coriander seed
  29. 2 kashmiri red chili (whole)
  30. 2 tbsp oil
  31. Salt as per taste
  32. Other Ingredient:
  33. 8-10 pav (bread)
  34. 1 chopped onion (optional)
  35. Oil for deep frying


  1. Change Preparing Green Chutney: Grind everything in a blender with water until smooth paste is formed Place it aside
  2. Change Preparing Dry Garlic Chutney: Take little oil on a pan Fry the garlic and red Kashmiri red chilliesfor 1-2 mins mins on low heat Now add the desiccated coconut roasted groundnut and coriander seedsSaute for 2 mins and add salt Blend all the ingredients together until coarse mixture is formedPlace it aside
  3. Change Preparing Vada Filling: Take a big bowl and mix mashed potatoes chopped green chilieschat masala garam masala coriander powder salt and chopped coriander leaves all togetherCombine all nicely Make medium sized ballsPlace aside
  4. Change Preparing the vadas: Prepare the batter by mixing all the ingredients The batter should be smooth and thick enough to coat the vadas Place a pan with oil on high heat Once oil is hot reduce to medium Dip the vadas in the batter and coat from all sides Fry until golden brown and crisp from all sides Slit the pav from center Apply the green chutney on both sides of the pav and spread some dry garlic chutney inside Place one vada in each pav
  5. Serve hot with some chutney and sev
  6. Tips: 1)The batter has to be thick for the coating of vadas Please dont add too much water 2)You can also use bread roll or slices if the pav is not available
