Vanilla Sponge Cake

The recipe from Gretchens Bakery ( I use half portion of her recipe. It is simple and you can always add icing cream or filling to make it more festive. Happy baking!


  1. 120 ml milk
  2. 65 g butter
  3. 2 eggs
  4. 175 gr granulated sugar (2 dl)
  5. 130 gr flour (1 6 dl)
  6. 1 tsp baking powder
  7. 1 tsp vanilla extract/powder
  8. pinch salt


  1. Prepare all the ingredients and preheated oven to 175 degree celcius
  2. Shift dry ingredients (except sugar) in a bowl: flour baking powder vanilla powder salt
  3. Heat milk and add butter stir until the butter dissolve and put aside
  4. Use a double boiler using hand whisk whisk eggs and sugar until the sugar is completely dissolved Dont overcooked it
  5. Take the eggs and sugar mixture off the double boiler and whisk it until it pale and gained volume If youre using electric mixer it takes about 5 minutes And using hand whisk it will take about 15 minutes
  6. Divide the mixture into two bowl In the second bowl add the milk-butter mixture and stir using a hand whisk until combined perfectly
  7. Pour the mixture from the second bowl into the first bowl Stir until well combined
  8. Pour the batter into baking pan and bake for 30-35 minutes
