Vegan Banana Bread With Chocolate Chips

I m always looking for a way to vegan-ize common recipes and this mixture is gold. I was surprised how yummy it turned out in comparison to other mixtures I ve tried. It wasn t super dense like my other attempts. I like that it was sweet as well (without being overpowering). ☺️

Ingredients

  1. 1 2/3 cup Whole wheat flour
  2. 1 cup Mashed bananas
  3. 1/2 cup Stevia sweetener
  4. 4 tbsp Coconut oil softened not melted
  5. 1/4 cup Water
  6. 1 tbsp Vanilla extract
  7. 1 tsp Baking soda
  8. 1/2 tsp Sea salt
  9. 6 tbsp Apple sauce natural
  10. 1/2 cup Soy yogurt (or coconut yogurt)
  11. 1/2 cup Chocolate chips Chocolate Dream brand is vegan

Method

  1. Change Preheat the oven to 350°F Mix the sugar with the apple sauce and softened coconut oil in one bowl Make sure the ingredients are mixed well
  2. Change Mix the flour baking soda and salt in another bowl Then mix with the ingredients in the other bowl Make sure to mix them well
  3. Change Add the banana yogurt water and chocolate chips Mix well with the previous ingredients
  4. Change Scoop mix into a 9 inch bread tin and bake for 60 minutes Check to make sure its not too moist with a poker If it is bake for a few extra minutes
