I have been making egg mugs for years, then began to see recipes for omelet mugs. This is today s version. Basic pattern for me is to start with onion/ pepper or protein base (beans, ham, or other meat) which I heat first. Then add the rest of the ingredients. Vital to blot excess moisture after each nuke blast.


  1. 1 tsp butter
  2. 1/4 cup frozen black bean blend
  3. dash chili powder
  4. dash ground cumin
  5. 1/4 cup egg beaters (egg whites only)
  6. 3 tbsp bread (torn into small pieces)
  7. 3 tbsp chopped zucchini
  8. 3 tbsp chopped roma tomatoes
  9. 3 tbsp shredded sharp cheddar cheese
  10. dash cracked pepper
  11. 1 1/2 tsp milk


  1. Add beans butter chili and cumin to large deep mug and microwave for 30 seconds
  2. IMPORTANT: DO NOT SKIP THIS STEP Use paper towel to blot any excess moisture
  3. Add all other ingredients and stir very well Let sit for 30 seconds too let bread soak liquids then stir again
  4. Microwave on high 1 minute Check to see if it iis set Heat 30 seconds more if needed Use paper towel to blot extra moisture before serving
