Wow its actually moist! Cornbread from a Box

After much experimentation, I finally hit upon just the right combination to get super moist, flavorful cornbread from a box. It never lasts very long! 😛


  1. 2 box jiffy corn bread mix
  2. 2 eggs
  3. 2/3 cup milk
  4. 1/3 cup sugar- white brown or a combination
  5. 1/3 cup plus 3 tablespoons mayonnaise


  1. Preheat oven to 400
  2. Combine all ingredients in a medium bowl and mix with wooden spoon just until well incorporated
  3. To prevent stiff cornbread do not overmix-batter will be lumpy
  4. Spray 11×7 glass casserole with cooking spray pour batter in
  5. Bake for 18-20 minutes or until toothpick inserted in center comes out clean do not overbake
  6. Serve immediately and enjoy!
