Zucchini scramble with chicken & artisan bread


  1. 1/4 loaf whole wheat artisan bread
  2. 1 zuchinni
  3. 4 eggs
  4. 2 dash coconut oil
  5. 1 marinated chicken thighs
  6. 1 cup chopped onions
  7. 1 bunch cilantro
  8. pinch pepper
  9. tsp salt


  1. Chop zuchinni into thin slivers
  2. Add zuchinni and chopped onions to pan and sauteed with coconut oil
  3. Pour whipped eggs on top and cook as you would scrambled eggs folding in cilantro Add salt and pepper as needed
  4. Take scramble off when ready (5 min)
  5. Add coconut oil to pan and sear marinated chicken
  6. Serve with toasted or warm whole wheat artisan bread
