Zuppa Toscana Crockpot Soup

Bursting with flavor and very fulfilling!


  1. 1 lb ground spicy sausage
  2. 3 large potatoes cubed with skin
  3. 4 cup kale chopped
  4. 8 slice bacon
  5. 1 small onion diced
  6. 4 clove garlic minced
  7. 32 oz chicken stock
  8. 2 1/2 cup water
  9. 1 1/4 cup half and half
  10. 1 salt to taste


  1. Add stock water potatoes and salt to crockpot set on high
  2. Brown sausage crumble to small pieces add to pot
  3. Fry bacon set aside keep grease in skillet
  4. Saute onions in bacon grease add garlic when onions are almost done (10-15 minutes) Add to pot
  5. Crumble bacon then add it and kale to soup
  6. Cook for 5 hours add half and half (warmed in microwave for 30 seconds so it doesnt curdle in soup) when potatoes are mostly cooked through Let simmer for 20 minutes more Serve and enjoy 🙂
